Holman Pale #16

Holman Pale #16 is in the tank and this version brought a few minor changes from the last couple of batches. The grist stayed pretty similar with just some Vienna malt added in, so the color with be a little bit darker than previously but should have a bit more malt backbone. The combination of hops used are a pretty classic blend of Centennial, Simcoe, Galaxy and Citra. I also subbed out the Dry Hop yeast blend and went with a cleaner yeast, a scottish strain from Imperial. I changed up the dry hop blend as it gave really nice, fruity esters but it seemed to be a little too intense in a really hoppy beer. I’m hoping the scottish yeast (which I’ve used before with great luck) will let the hops come through a little better.

*Hop steep of 30 mins, temperature down to 180 when started to cool.

Imperial A31 – Tartan

Pitched yeast at 66 and fermentation started off pretty quickly, within 4 hours. Fermentation was steady but no extra heat produced for the 1st 24 hours. Temperature set at 69 degrees and will be head there until the cold crash.

Kegged on 4.26 and finished at 1.006. I’m very surprised it finished that low as that is 88% attenuation and more like a Belgian or saison yeast’s range. The sample tasted clean, hoppy and delicious. Will be on tap soon

Tasting Notes – 5.25.17

Aroma: Huge aroma of tropical fruit, citrus and pine.

Appearance: Hazy golden with a nice white head that lingers for a bit before fading away.

Taste: Tropical fruit and grapefruit up front with some pine notes coming in next.  Bitterness is non-existent and finishes super smooth. Dryness really always the hops to come through.

Mouthfeel: Medium-low with medium carbonation

Overall: This is the one! A nearly perfect pale ale after 15 other batches of experimentation. The hops give the perfect blend of citrus, tropical fruit and pine without one flavor being too dominant. Switching to the Scottish yeast really dried out the beer and lets the hops come through even more than before and with less esters it doesn’t get in the way like with previous strains (i.e. Imperial dry hop blend). Grist provides a nice backdrop to the hops and provides some mouthfeel but this one is all about hop flavor. Virtually zero bitterness and such a dry beer make this super easy to drink. Nothing to change on this one for next round. Cheers!
